ABOUT THIS COOK:

I have an auto-immune disease, Hashimoto's, which I manage by being completely gluten and corn free. I have been eating this way for almost a year and it is my goal to eat as much of the same things as i did before, just without gluten or corn. I have also made up some rather tasty non-traditional dishes as well.
