
Lassi, the Indian yogurt drink that's meant to soothe your soul after the beating of a hot curry, traditionally comes plain (sometimes salted) or blended with mango pulp. Both are delicious, but it's strawberry season here and it's already sweltering: a lassi beckoned. So, this morning, I swapped a few fresh strawberries for the mango, tossed in a handful of mint leaves and a little raw sugar (a lassi should suggest sweetness, but shouldn't be sweet). The blender whirred away until the sugar dissolved and the yogurt became stained pink, then my daughter and I sat on the kitchen floor and drank the whole batch. Be prepared to do the same.
Strawberry Mint Lassi
Serves 2
- 14 ounces Fage Greek yogurt (full-fat)
- 16 mint leaves
- 8 ripe strawberries
- 3 1/2 tablespoons raw sugar
- 1/4 cup water
Layer all the ingredients in a blender, then turn it on. Stop to scrape down the yogurt or any other errant ingredients. Once it's smooth, pour into glasses and sip until content.













I just made this and am drinking it as I write this. It's just wonderful! I love it - so refreshing. The mint is a great addition to it without overpowering the strawberries and yogurt.
Amanda - commenting on your complaint about strawberries going bad. Tip from farmers in northern CA: put the berries, unwashed, in a container lined with paper towel and then place another paper towel on top of them. Put on the lid and refrigerate. My organic strawberries from farmers' markets stay good for well over a week!

added about 1 year agoYes -- and amazing how quickly strawberries go bad. Bought some at the Greenmarket on Saturday and by Monday they were wilted and nearly rotten.
Took 2 quarts of very ripe farmers market strawberries and laid them out on a sheet pan just big enough to fit on the top shelf of my frig. They are still OK this morning (2 days later).
