The End of Mystery Meat?

Food and education communities alike have been working for years to improve the sad state of school lunches, and they’ll finally see some results in cafeterias this fall.

The new USDA guidelines bring about some sorely needed changes. Trans fats are out, for one thing. Schools must offer more whole grain-rich options, and every student has to take at least one fruit or vegetable with each meal. Our favorite stipulation is color-related: schools must offer orange, red, or dark green vegetables at least once a week. Will this be the start of Swiss Chard on cafeteria trays?
