A New Guest to the Taco Party

By now, we know that everything is more fun at a taco party. So today, we’re bending the rules a bit, stretching them so that more foods qualify as tacos, and thus, our chances for fun increase exponentially. Everybody wins.

Here it is: eggplant tacos. To clarify, in these tacos, the eggplant is the tortilla. Is. (Brilliant, right?) These would make an amazing appetizer, with their healthy hit of cilantro and thick layer of just-soft Brie. Or, just organize a party around them. Like us, they’d definitely rise to the occasion.

I have a thing for most foods topped with a fried egg, a strange disdain for overly soupy tomato sauce, and I can never make it home without ripping off the end of a newly-bought baguette. I like spoons very much.

Ahhhh how is this even real! The eggplants I bought at market yesterday are teeny, but maybe I will make mini-tacos!

I am definitely making these like... immediately. So immediately that I've been the fabric of time and I actually made them yesterday and already ate + loved them. (Is that a thing? I haven't had coffee yet.) But basically, YES. I love these!
