In the video below, A&M leak two nifty ways to clean and cut leeks in a video for The Today Show's Cooking School series. Weep no more before your produce stand, wondering, helpless and bewildered, how to tackle the insidious dirt trapped inside this onion relative. We're using these techniques for kaykay's Absurdly Addictive Asparagus and Waverly's Morel Crostini: what are your favorite leeks?

Love seeing you guys in action! You look so natural, you should have a TV program! Great job. One question: how to use the green parts? You said on sauces; any suggestion?
