How to Segment (and Slice) an Orange

by:
February  4, 2011

To get you ready for our next contest, Your Best Recipe for Citrus and Olives, A&M demo 2 of their favorite ways to cut an orange -- and the best knives to get the job done. Merrill segments (or supremes, if you're fancy) an orange while Amanda slices one into thin cross sections.

This week's videos were shot and edited by our buddy Drew Lavyne, the founder/director of Six Minute Stories and the producer of the super helpful Teach Me Sushi iPhone app -- and the new Teach Me Sushi Expert app (glimpses of both below).

a good tip (from i think it was julia child or jacques pepin) is to segment over a bowl to catch all the excess juice that falls. then after removing the segments, squeeze the leftover juice from the membranes into the same bowl.

Funny - I just posted a recipe for carrot salad with orange wedges. I included a pictorial showing how to peel an orange. This is such an important technique! I use it all the time.
