a good tip (from i think it was julia child or jacques pepin) is to segment over a bowl to catch all the excess juice that falls. then after removing the segments, squeeze the leftover juice from the membranes into the same bowl.
Funny - I just posted a recipe for carrot salad with orange wedges. I included a pictorial showing how to peel an orange. This is such an important technique! I use it all the time.
I was so waiting to hear the, " uck, we shouldn't have cut the citrus on the same board as the garlic"
