I love Blue Bottle, but here in Chicago, Intelligentsia is king. It's almost hypnotic to watch them use one of these siphons.

I just wrote a post in my blog about Chemex brewing -- what a coincidence!

that is too funny! Having nightmares of high school chemistry class right now. I would love to see this in action first. Is there a video anywhere??
