In the video below, A&M are joined by legendary baker and cookbook author Dorie Greenspan. Together, they make lapadia's Himalayan Blackberry Pie and Dorie shares all sorts of dough-making tips, including a gorgoeous edge-crimping technique we've never seen before.

@Hummusit - I've not seen crimping that looks like it could be hanging over the pie plate..which then leads me to believe it could droop while baking. However, reading Amanda's comment (below) the crust did not. I always keep my crust closer to the plate's edge, have still never tried what is shown in this video. Has anyone else? PS - there is a cook here on F52 (name is Crispy) that crimped her pie this way. I think it is .....amazing.
You've never seen that crimping technique? How do you crimp?
I always scrape my bowls and think no one is as anal as I. Glad to know I'm in such wonderful company. The videos were charming and so fun to watch.
Ok, sorry to be difficult here, but that pie would have been better if you had brushed water on the rim of the base crust before adding the top crust to make a good seal. You can see the crusts have separated, which looks a bit wonky. The juices really shouldn't ooze out of the sides. Sorry to be a pain about this, but I think this pretty pie would even be better with that added step :)

added about 1 year agoWhen I made it again recently, I just used the cream to brush on the rim. Made for good glue.
What a terrific video- how cool for Lapadia and Midge to have Dorie make their pies! Dorie is adorable and now I HAVE to get her book...and this blackberry pie looks completely awesome.
I loved watching the video with my two daughters! What a treat! However, what a sad ending when we didn't get to see the treat of anyone taking the first bite!! Awwwwww!!!! :(

What a treat this was to watch! And what a thrill to watch Dorie with both of you. Quick question on the beautiful "ribboning" technique on the crust edging: since it looked like the edges of the crust were overhanging the pie plate, I thought they might "melt" off and drop off because of the butter, but they didn't. Was that an optical illusion or was the crust in fact overhanging the pie plate? It was just a beautiful technique!!
I'm definitely trying it on my next pie!
Yes, I was thinking the same re: the beautiful crust technique and thinking it could possibly droop down, but perhaps I just didn't see the support of the rim below. (?) Agree, it was beautiful!
